- (1 2/3 cup) Almond flour
- (1/2 cup) Cocoa Powder
- (1 tsp.) Baking Soda
- (1/2 tsp.) Salt
- (3) Chicken Eggs - Pastured
- (1/4 cup) Oil
- (1/2 - 3/4 cups) Raw Honey Pint
- (1/2 cup) Cultured Buttermilk, Pint
- (1 1/2 tsp) Vanilla Extract
Prep a 9" round cake pan by cutting out a parchment paper to fit in the bottom. Grease the sides of the pan and dust with cocoa powder. Preheat oven to 350°.
Sift first four ingredients together in a mixing bowl. In a separate bowl, whisk together the eggs. Add oil, honey, buttermilk, and vanilla to the eggs. Dump into the dry ingredients and beat together thoroughly and quickly. Pour batter into prepped cake pan and immediately place in oven. Bake 30-40 minutes until toothpick comes out clean.
Notes: I use avocado oil. Amount of honey depends on how sweet you like it. Once you mix together the acid (buttermilk and honey) and alkaline (baking soda), together which cause the rising action, the cake needs to be in the oven ASAP.
